Dense bread. Sticky dough. Dough that was perfectly fine five minutes ago and has apparently decided to start a new life without you.
Fresh-milled flour has a way of making beginners question every recipe, every rule, and occasionally their own ability to bake bread at all.
So this is where we answer the questions everybody eventually asks.
Why is my loaf dense?
Why is my dough sticky?
Why did it rise yesterday and sit there like a lump today?
How much water does this stuff actually want?
Which wheat berry am I supposed to use?
And why does absolutely nobody seem to agree on any of it?
These aren’t textbook answers copied from somewhere else.
They’re the things we’ve tested, learned, broken, fixed, and occasionally argued with in real kitchens using real fresh-milled flour.
Start here. If you think it’s a weird question. Chances are, somebody else already asked it.
